Also, I am totally with you on not making all the freezer meals at once. It is kind of overwhelming, in my opinion. I had to insist that it was just too hard on me and I'd have 2 littles with me so passing out was all the more dangerous. They let me and told me that if a certain protein showed up to indicate a likelihood of gestational diabetes, I'd have to drink the glucola. Since you literally passed out, I think they'd work with you!MommySizedHearthttps://www.blogger.com/profile/05289202506143484118noreply@blogger.comtag:blogger.com,1999:blog-1483833508282652888.post-41928756934955121792017-09-08T08:07:44.420-05:002017-09-08T08:07:44.420-05:00My favorite slow cooker soup recipe, which is vega...My favorite slow cooker soup recipe, which is vegan and also freezes well: https://www.budgetbytes.com/2013/09/slow-cooker-white-bean-soup

Two easy veg options that aren't much harder than defrosting/reheating:

For a super-quick one-pot vegetarian meal, I toss together chunky pasta, good jarred tomato sauce (I like Barilla marinara or tomato and basil), canned white beans or chick peas, and frozen chopped spinach (thawed and drained). It isn't gourmet, but it's a complete meal that really doesn't take any longer to make than plain pasta.

I like using yogurt or tahini sauce (plain yogurt and/or tahini, lemon juice, water, minced or crushed garlic, pinch of salt) to turn rice or quinoa, sauteed or roasted veggies (or even spinach wilted in the microwave), and canned beans or chick peas into an easy meal. Also makes a good salad dressing.Katiehttps://www.blogger.com/profile/16373367950937808774noreply@blogger.comtag:blogger.com,1999:blog-1483833508282652888.post-40820067558503169212017-09-06T23:21:22.451-05:002017-09-06T23:21:22.451-05:00Not for your freezer, but here is a VERY easy 15 m...Not for your freezer, but here is a VERY easy 15 minute (honestly, 15 minutes) vegetarian meal that is shockingly delicious (and I am not a vegetarian! I've been so unwilling to make dinner lately that I think having things in the freezer that I can pull out will be really helpful! Also, I second Beth with all the soups! Some potatoes diced. Maybe some onion. Cooked in the Crock-Pot in chicken broth seasoned with salt & pepper and thyme. At the end, stir in some cream or milk. Usually I add in some chopped ham but that could be optional. This would make a meal with leftovers to freeze. That's my favorite way to stock the freezer: double recipes and freeze instead of having a freezer cooking day. Then a bag of frozen soup, thawed out, heated, and dinner's done. Good luck!Beth Maybeehttps://www.blogger.com/profile/14140657259209047550noreply@blogger.comtag:blogger.com,1999:blog-1483833508282652888.post-91492860289521626942017-09-02T10:29:28.813-05:002017-09-02T10:29:28.813-05:00I'm in the UK so this might be irrelevant but ...I'm in the UK so this might be irrelevant but I thought it was worth mentioning. I have to have a glucose tolerance test every year and, like you, I despise the drink. My doctors took pity on me and now let me drink a very precise amount of Lucozade which does the same thing but, in my opinion, is much better. Perhaps it's worth asking if there are alternatives? Hope it goes well!

You look great! Ruthhttps://www.blogger.com/profile/13863993981957649956noreply@blogger.com
