Weekend Recipe: Hibiscus and Mint Lemonade

Last weekend, Adam and I decided to try a new summertime lemonade recipe.  We had seen this one in a Real Simple cookbook, and decided it was time to make it.  It was delicious.  I was not sure how much I would like it, but I am obsessed!  It was a little tangy from the lemons,  cool and refreshing from the mint, and decently sweet.  Plus it is a gorgeous color!  I am seriously considering purchasing a mint plant, just so that I can make this recipe more often.

Hibiscus and Mint Lemonade

makes 4 servings
4 bags of hibiscus herbal tea (they suggested, and we used Red Zinger by Celestial Seasonings)
2 cups of fresh mint leaves
2 1/2 cups of lemonade (We did fresh lemonade and I used this recipe from Martha Stewart. I think it made a huge difference, but I have not ever made it with powdered lemonade, so I can't vouch for my way)

Prepare your lemonade. In two cups of boiling water, steep the teabags and the mint leaves.  Gently mash the mint with a wooden spoon.  Let the hibiscus and mint mixture cool.  Strain out the mint leaves and tea bags and pour the hibiscus mint tea into the lemonade.  Refrigerate for 2 or 3 hours, and enjoy.
