Vegan Muesli-Mix

 We thought Fox might be lactose-intolerant a month or so ago, so I cut out milk and yogurt.  A sad day in the life of a cereal-junkie.  I had a few ideas for how to solve it (non-dairy milk, and the like), but I love granola and yogurt, and was really missing my daily dose, so I decided to try to find a non-dairy substitute.

Enter vegan muesli-mix.  I am quite sure this won't appeal to everyone, but it is the perfect breakfast (or afternoon snack) for the cereal lover, like myself.  It has a good amount of peanut butter to make it stick to each other, and a little honey/maple syrup to give it a touch of sweetness.  Basically it is my ideal snack.


Vegan Muesli-Mix:
a Landen original

serves 1
1/2 cup oats
2 Tbs Bran sticks cereal
2 tsp raw millet
1 tsp maple syrup or honey
2 tbs peanut butter

Pour oats, bran, millet and honey into a bowl.  Stir to combine then add the peanut butter and stir until combined.

I also really like to put the bran in the oats, add about a scant 1/2 cup of water, cook in the microwave, then add the millet, syrup, and peanut butter.  Stir it together and top with almond milk.

  1. My little Amelia was allergic to dairy. Because I breastfed I had to cut out everything dairy. Like anything labeled whey, eggs or dairy was off limits. It was so tough. Enter in almond milk and coconut milk. It was so hard not to have yogurt and ice cream. I found a coconut milk ice cream and heard at specialty stores there was coconut milk yogurt. I could never find it, but I've heard it's out there. Good luck on your dairy free adventure!

    1. That sounds awful! I can still do butter, cheese and eggs, but milk seems to be the problem. I have tried coconut milk ice cream, which was okay, and I tried coconut milk, which I was not a fan of. Almond milk is definitely the winner in my milk-substitute journey. Thanks for the well-wishes! Hopefully he will eventually be okay with it!

  2. You might want to try oat milk. It's cheap and easy to make, and I find it's a fairly neutral "milk."

    I, unfortunately, cannot do butter or cheese (I can do eggs, since eggs aren't dairy and I'm only lactose intolerant, not allergic to dairy or eggs). I miss them and sometimes indulge, only to regret it a little later :)

  3. I've got a little boy a few weeks younger than Fox and he is the same with lactose. I've been drinking lactose-free milk and it's delicious!!! (and still tastes like normal milk!). I just need to find something for ice cream now.... ;)
