We are getting down to crunch time around here!  We have about 3 weeks left in Texas before we head to Utah!  It has been a little crazy, and I am trying my best to use up as much as I can in our pantry and fridge.  

A few days ago, I mentioned that I might want to bring a few food stuffs to Utah with us (I may have mentioned condiments specifically), and Adam was sort of like, "why on earth would we do that?" I think Adam was envisioning my putting our mayonnaise jar in the cupholder during our 22-hour drive to Utah. When I realized what he was thinking, I had to laugh a little, because it did seem a bit ridiculous.  

Maybe I was thinking of packing the mayonnaise, but there are a few items I might be loath to give away, like my almond flour, or jar of dijon mustard. With these thoughts running through my mind, I might just end up making a whole lot of everything the next couple of weeks, so that I don't decide in our last busy moments in Texas to bring the whole fridge and pantry with us.  It should make for a lot of tasty meals!

Hope your week is going well, and is slightly less messy than mine (I am currently sitting at a desk strewn with papers, bags, books and electronics that need to be packed up. Behind me the kitchen counter is piled high with kitchen gear will be finding a new home with friends and at the thrift store.  I would say, I can't wait for it to all go away, but that means we will be leaving to, and I am not sure I am ready for that yet.  Physically or mentally.).

Vegetables to be used:
Radishes
Collard Greens
Potatoes
Carrots
Corn
Kale
Cabbage

Menu for this week:  
Collard Green Falafel, Homemade Pita bread, hummus - These were delicious. And super time consuming, but REALLY delicious!
Radish soup with Kale Salad - this soup was meh... I think including the potato was a medium idea.  It made it super thick. I might roast the radishes next time, and add something else... not sure what though.
Pesto Potato Pizza - I always like pizza.  Fox thought this was the greatest meal ever.
Lentil Soup - I actually have no idea where the recipe for this soup came from, but it was quite good.  If I remember where it came from, I will let you know!
Homemade Pasta with White Sauce  - This stuff is really good!  So heavy, but really good!
Vegan Cashew Corn Chowder - I LOVE this soup.  It is incredibly delicious and dairy free!
