Spinach Feta Salad

A few weeks ago, I was looking back over my recent recipe postings, and realized that I have done almost exclusively breads and desserts, lately.  Really delicious and somewhat reflective of what we have been eating recently, but not great for inspiring you to cook with vegetables.

I guess the real problem is that I hadn't made a great original salad in a while.  Most of my recent salads have been repeats of old favorites, or kind of blah.  Sad, but true.

Then, the other night, I threw this salad together when my mom and brother were coming over for dinner last week, and I was completely shocked at how much I liked it.

It is so simple, and similar to this salad, but the flavors are slightly more complex, and there is a lovely salty, sweet blend when the almonds mix with the feta.  It is so good!

Spinach Feta Salad 
Serves 4

4-6 cups of baby spinach
1/8 cup chopped almonds, toasted until just browning
1/8 cup feta

Dressing:
Adapted slightly from Food Network

1/8 cup balsamic vinegar
1 tsp brown sugar
liberal shake or two of garlic powder
1/4 tsp salt
pinch of ground pepper
3/8 cup good olive oil
