Menu Plan for the Week

Another week of cooking has come and gone.  I have been much more experimental the last few weeks, so there are less links to recipes in this post and more notes about the recipe results with a promise that if I can perfect them, the recipes will get posted here.  Hopefully the recipes will inspire creativity, if nothing else.

In other news, Fox and I are at Bear Lake right now soaking up our last few weeks in Utah, and are probably playing on the beach while you are reading this.  Here's for hoping we are not getting nasty sunburns.

I hope your back to school preparations are going well, and that you are eating lots of delicious food!

Weekly Menu:

Creamy Beet Sauce over Pasta - I used to say beets tasted like dirt.  And sometimes they still do.  This recipe kind of tasted like dirt.  In a sophisticated dirt-flavored way...? Sound delicious, right?  I will work on this recipe and report back when I get it the way I like it.  For now, try out this fabulous beet soup, if you are craving beets.
Carrot and Chickpea Salad - I love this one.  Always and forever.  Fox will eat the carrots, peanuts and feta from this one.
Blackberry, Balsamic and Basil Pizza - This was a medium flop for me.  Not great, not terrible.  I think it was missing some flavor and texture elements.  I am going to keep working this one, too.  Janssen has a delicious recipe for a strawberry pizza recipe that is somewhat similar.  Check that one out instead!
Strawberry Brie Balsamic Sandwiches - These were super good, but I think I can make them just a little better.
Summer Pasta with Roasted Red Pepper and Zucchini - This was a total surprise, and was fabulous.  Sadly/happily, I had company that day, and didn't get any photos of it. It is a super easy one, and really good. It was sort of based on this recipe.  I served this with the spinach, feta salad that I posted on Monday.  Also, I made my own roasted red peppers for this recipe.  I created a full tutorial over on Creative Green Living, so feel free to check that out, if you are ambitious enough to make them yourself.
Onion and Spinach Quiche - Similar to this quiche recipe, but I subbed in spinach, which I typically like more than kale, anyway.

    1. I just noticed that the other day! I will see if I can get that fixed! For now, you can check out the categories in the top bar, and recipe index for recipes, but that is the most I can do for now :( sorry!
