Dark Chocolate Almond Sea Salt Bar

My biggest beef with making homemade truffles/chocolate-covered fruit/whatever, is all the leftover chocolate, that I never know what to do with.  You know, you feel like you should scoop it out of the bowl, but you know you shouldn't eat that much chocolate in one sitting (especially since you will be eating a chocolate-covered dessert soon, too), and you can't let it harden in the bowl, because it is almost impossible to get out once it sets up(trust me, I have tried).  

My solution is to turn the left overs into a homemade candy bar.  Easy, and delicious.  Or you can just make your own chocolate bars from the get go, and enjoy it for a few days after Valentine's day.  



Dark Chocolate Almond Sea Salt Bar: 
2 cups dark chocolate chips
1/2 cup toasted almonds, chopped
2-3 tsp flaky sea salt
Put 1 1/2 cups of dark chocolate chips in a microwave safe bowl.  Heat until it is just melted (stirring every 30 seconds).  Add the last 1/2 cup of chocolate and stir until it has melted.  

Spread it on a piece of wax paper with a rubber spatula. 

Sprinkle with almonds and sea salt.  Let cool, and break into pieces.  Store for up to 5 days in an airtight container in a cool, dark place.
