Life with a CSA

Did I tell you we are spending most of the summer in Utah? Probably not. Surprise! We are! It was a relatively recent decision, and we have been telling people, but not spreading it around, really.

We are headed out there because Adam got a job working at a university there for the summer.  We are really excited about it, because a job (even temporary) is great, Utah is the most beautiful place in the summertime, and we will be close to family for at least a little while.  Plus we are renting a darling little house, that I am beyond excited about.

This move also means that my CSA share posts are coming to an end, and that the last few weeks I ended up having to smush the shares together to use them all up, so we are getting SO many vegetables in the next four weeks!  My fridge is loaded with veggies!  Here's for hoping I can find ways to use them all up!

I am hoping to do some farmer's market shopping in Utah, and if I do, I will share more about that then, and possibly some menu ideas.

Since these CSA posts will be stopping, I wanted to ask you: have they been helpful?  Do you like having a list of recipes each week to look at for ideas?  I have enjoyed posting them, but I am all about doing helpful stuff, so if it isn't, please let me know. Thanks in advance!

Things to use up:
Carrot
Beets
Kale
Collard Greens
Leek
Lettuce
Sweet Potato
Potatoes


Weekly Menu: 
Beet Pizza with Feta and Cilantro - I switched up this recipe.  It turned out great!
Collard Greens and Leek Tart - This is a great way to use up greens.  I have been making it more and more lately.  Just don't put more than 1/2 bunch in, or the middle won't cook all the way, because there will be too much moisture.
Carrot and Chickpea Salad - I ate about four bowls of this in one sitting when I was pregnant with Fox... It is delicious.
Baked Potatoes with Cilantro Peanut Sauce (similar to this) - Not too bad.  Make sure you eat it with a salad.  It is pretty heavy.
Kale and Sweet Potato Salad - with French Bread - This is my favorite way to eat Kale.
Carrot Quiche - as soon as I take a decent photo, I will post it here!  Hopefully that will be this week!

  1. I have liked the posts about the CSA because they have introduced me to some new vegetables like leeks, that I probably wouldn't have tried otherwise. Summers in Utah are the best! There are a lot of great Farmer's Markets here.

  2. love the CSA posts! you could always try freezing some of the produce you don't have time to use up - it always works later in difference kinds of soup.

  3. I really wish my husband liked more vegetables! Sometimes it's hard to plan healthy meals because he's so picky. I hope to one day convince him of their goodness. Have so much fun in Utah! Utah summers really are the best. We'll be enjoying our last one here before we move to Houston in August.
