Halloween Cooking with Fox ('Slice and Bake' Bat Cookies)

One of the best parts of having a baby is watching them learn and grow. Fox is constantly recognizing letters, saying new words, learning new skills and making connections every day.  It is exciting and fun to see him discover new things.  I have just recently decided to let him help me in the kitchen.  Obviously I don't let him do anything that requires sharp tools or the stove/oven, but he loves scooping and adding ingredients to mixing bowls, and stirring mixtures together.

Because of his love for being involved in the cooking process, I thought a video of us cooking together would be fun.  It is a little crazy, and not a comprehensive guide for making bake and slice cookies, but it was fun to shoot, and I thought you might like seeing it!  Plus, Fox is just SO cute in this video!  I was obsessing while going through footage of it :)



'Slice and Bake' Bat Sugar Cookies:

White Sugar Cookie Recipe: 
slightly adapted from Our Best Bites
1/2 cup butter, room temperature
1/2 cup sugar
1 small egg
3/4 tsp vanilla extract
1 1/2 cups flour (spooned into the measuring cup)
3/4 tsp baking powder
1/4 tsp salt

In a large bowl, combine the butter, sugar and egg.  Mix for a minute or two until fluffy.  Add the vanilla extract and mix again until well combined.  In a smaller bowl, combine your flour, baking powder and salt and stir until evenly distributed.  Add the dry mixture to your wet mixture in three parts, stirring a few times between each addition of dry mixture.  Mix until just combined.  Refrigerate from 30 minutes to overnight.

Brown Sugar Cookie Recipe:
1/2 stick of cold, unsalted butter, chopped into 1/2 inch cubes
1 Tbs flavorless oil (canola, safflower, etc)
1/2 cup granulated sugar
1 tsp vanilla
1/2 tsp salt
1 large egg
1/4 cup cornstarch
1/4 cup cocoa
1 1/4 cup all-purpose flour


In a stand mixer, combine the butter, oil, sugar, vanilla, salt until it is just barely smooth.  Add the egg, and mix again until just combined.  Add the cornstarch, cocoa powder, and flour all at once, then beat until it just comes together.  Refrigerate for 30 minutes to overnight.

Remove the dough from the fridge about 10 minutes before you are going to use it.
Break off small pieces of the white dough (about the size of a golfball) and roll into skinny snakes (about 1/2 inch in diameter).  You will want about 6-8 of these white snakes.

Dust a clean counter with flour.  Break off a golfball-sized piece of the brown dough and roll it out  with your hands into a thick snake (reconnect with your play-dough days).  With a wooden dowel or shish-kabob stick make indents lengthwise in your brown dough to create a bat.  You want two indents on the top half of the circle and three on the bottom half.

Now take your skinny white snakes and lay them in the indents to help your dough hold its shape.  Once you have all your snakes in a bundle (with the brown bat shape in the middle), roll your entire log on your floured surface until none of the brown shows through the white cookie on the outside.  Add a little more white cookie dough if necessary.

Wrap your dough in plastic wrap (or a silicone mat), and refrigerate for 30 minutes.

Remove from the fridge, preheat your oven to 375°F, and chop off the ugly ends of your cookie roll.  Now cut 1/4" cookie wheels, each with a tiny bat in the center.  Bake on a silicone mat  for 9-11 minutes until the edges of the cookies are just beginning to turn a golden brown. 

Remove from the oven, let them cool for a few minutes, then eat to your heart's content!

Christmas time is such an good time to spend time with family and friends.  It just feels so right.  Last year we had to stay home because Fox was due the week after Christmas, and until last year we had been switching off between Adam's family and mine for the holidays, so this year we weren't quite sure who to visit.

We saw both of our parents a few times during the year, and will see my family a few times next year, so we talked about going to Salt Lake to visit Adam's family because we may not get to see them next year.  We went back and forth about the best thing to do, driving, flying, going, and not going.  Finally after much deliberation, we decided not to go anywhere, but to spend Christmas at home in Austin, again.  We broke the news to Adam's parents, who were pretty sad that we weren't going to be coming.

Then, the next day,  I got a text from Adam saying that he really thought we should go to Salt Lake, but that we should surprise his parents by just showing up.  Normally I would be against just showing up at someone's house to stay, but they were really hoping we would come, and Adam's parents are the most flexible and kindest people, and we knew they would be thrilled, so I said yes, and the preparations started.

It was fun to talk with them a few days before about their week, knowing that we would be showing up in a few days.

We had such a fun time trying to keep the news from them and anticipating their reactions.  Their reactions were better than we could have hoped for.  Tears, delight, excitement, and joy!  Check it out in the little video that we made!

Also, I am planning on making lots more videos this year (the goal is at least one per week), so stay tuned for more fun videos!

Christmas Traditions + Video(!)

The Christmas season is finally here!  And it one of my favorite times of the year!  Adam was asking me a few days ago what I like most about Christmas.  There are a few things, but I think the thing I like best is having family traditions.  I love looking forward to family activities, meals, gifts, and time spent with family.  I think traditions help make Christmas extra special.  

I have parents who are expert tradition makers.  We always had a 'shepherd's meal' on Christmas Eve, where we would have a meal picnic style on the floor, by candlelight.  We listened to this very old tape series called "The Cinnamon Bear" that was all about a bear who helped a little brother and sister find the lost star to top their Christmas tree (it was cheesy, but we all loved it).  We dropped off Christmas treats to friends and neighbors and sang "We Wish You a Merry Christmas" to them.  We had a specific order for opening presents so that the enjoyment and fun would last as long as possible.  These are just a few of the many traditions that I grew up with.  I could go on for hours.   

When Adam and I got married, I had a hard time figuring out how to cultivate the Christmas Spirit in our home.  We both love Christmas time, but each of our families has their own traditions, and figuring out what we wanted to keep, and what we wanted to add has been challenging.  

Making the effort to establish certain traditions seems a little overwhelming when you first get married and Christmas is a very different holiday when it is just you and your spouse filling each other's stocking.  I feel like the effort is definitely worth it, but it took me a while to figure out how to really infuse our house with the spirit of love and giving that is Christmas without kids or our families around.  

A tradition that we started last year is sending out Christmas cards, and I loved the other traditions that have sprung from that.  

We take our own family photos each year, to document another year as our family grows and changes.  We hand-deliver our Christmas cards to friends in the area, making a special homemade treat to go with the card.  We take the time to write notes on our cards to family who will get them in the mail.  It is a process filled with love, reflection, and memories.  I absolutely love it.  

This year, I took the Christmas card delivery one step further and ordered a self-inking rubber stamp, and recipes cards from Tiny Prints, along with our cards, envelopes, envelope inserts, and customized postage.  I have already taken a few tasty treats around, and it has been really fun to be able to personalize the tags and write down the recipes that I have created to share with friends.  

I take treats to people all year long (thanks to blogging we end up with lots of extra treats), and it will be super nice to have recipe cards and a personalized stamp.  I'll use it long after the Christmas season.   

We have created a little video highlighting some of our Christmas preparations and some family photo behind the scenes! We are pretty obsessed with how the cards turned out and had a great time taking photos and getting the cards ready to send out!

Vlog and a Clothing Swap

I love new things.  Packages in the mail, new shoes, furniture, haircuts, you name it, I most likely love getting it new.  With the minimalist part of my life kicking into high gear, getting new things all the time (other than food), seems unnecessary.  But I still love getting new stuff.  The remedy?  Stuff swaps.  Primarily clothing, although one time I went to a household item swap for a church activity, and that was pretty awesome. Get rid of what you don't want or need for things you do!

I have done unofficial clothing swaps many times with my sisters, old roommates, friends and even the laundry room's thrift store donation bin at one of the apartment complexes that I lived in.  Just in the last few years, I have started to participate in more official clothing swaps hosted by me, or by friends, and I must say, they are SO fun.  Particularly if the people you are swapping with have similar clothing style as you. Chances are you will come home with something great!

This time, I was able to find lots of fabulous things to take home.  A few times I have brought home things that I thought were fun, but in the end, I never wore them.  Because of this, one of the main things I did this time, was really focus in on what fit well, and what I thought I would actually wear.

I carefully selected each item, tried it on, and decided on whether or not it would fit in with my current aesthetic, and closet.  Despite rigorous tests for fit, and style, I happily ended up bringing home a large box of stuff that I am extremely excited to wear! It has been oh-so-tempting to wear some of it, but I have done quite well resisting while I am doing my 15 day clothing challenge!

The brownie recipe that I make in the vlog is here.  You should probably make them today, because they are INCREDIBLE!  And if you decide to lick the bowl or spatula after you make your brownies, I totally get it, because I do it too (but I accept no responsibility if you get sick!)!

Happy Halloween + Vlog

Happy Halloween!  Over the years I have gone through various stages of liking/disliking Halloween.  As a kid, it was such a great holiday.  We carved pumpkins, got free candy, got to dress up, had an awesome Halloween dinner complete with a green jello hand and smoking root beer from a chunk of dry ice, and a few times, my dad went all out and made the coolest decorations for our church's trunk or treat (Think Pirates of the Caribbean ship with mast and sails, castle with port-cullis and working drawbridge, etc).  It was heaven for a little kid.

In college, I studied Costume Design for Theater, and whenever people found out that I sewed and made legit costumes regularly, I usually got asked to make them a Halloween costume. It was usually a joke, but it got a little irritating, because it happened pretty regularly. So after a while, I started resenting Halloween.  Also, I don't like dressing up.  Ironic for a costumer, I know, but I like to dress other people up.  Not myself.  So, I stopped dressing up, and tried my best to ignore Halloween.


Once you have a baby, though, it is hard to not get excited about Halloween.  Costumes are so incredibly adorable on a baby, and somehow, Halloween has become important to me again.

This year, I wasn't a total convert.  I didn't get any decorations up this, and we didn't carve pumpkins (we will once Fox gets a little older), but you better believe I went all out on costumes for our church's Halloween party.  I was extremely resourceful (read: cheap/creative), and modified a tiny grey sweat suit to be a rat costume complete with ears, tail and a teeny-tiny chef's hat.

I felt a little bad dressing him up as a rat on his first Halloween, but it was for a good cause (In case you can't tell, we are Linguine, Collette and Remy from Pixar's Ratatouille)!  Adam and I were able to scrounge up some chef-like costumes and Adam made these sweet-awesome chef's hats for us!  All in all, I was pretty proud of the effort that we put forth for this Halloween! Family costumes are the best!

Also, Fox is obsessed with this spatula, and really enjoyed carrying it around and banging it on things throughout the night.
